Abstract

Food safety remains a critical public health concern, particularly in rural areas like Ibiono Ibom LGA, Akwa Ibom State; where limited infrastructure, poor hygiene practices, and lack of awareness contribute to food borne illnesses. This study examines the key challenges affecting food safety in rural communities and proposes interventions to mitigate risks. A mixed methods approach was used, combining surveys, interviews, and microbial testing of food samples. Results indicate that poor food handling, inadequate storage, and contaminated water sources are major contributors to food borne diseases. Statistical analysis revealed significant correlations between education levels and food safety practices. Recommendations include community education programmes, improved water sanitation, and policy enforcement to enhance food safety standards.
